mighty miso soup

COOKING TIME: 15 minutes

YIELDS: 4 servings

4 cups vegetable broth
2 cups chopped spinach
2 cups Enoki mushrooms
1 cup chopped green onion
1 cup chopped firm tofu (tiny cubes)
4 tbsp white Miso paste 

Place broth in a medium pot and bring to a low simmer. Add spinach, mushrooms, green onions and tofu and simmer for 5 minutes. While this simmers, place miso paste in a small bowl, add warm water to it and stir until it becomes smooth. Remove pot from heat and add miso while stirring well. Other ingredients you can add are potatoes, fish, clams, crab - you name it. Enjoy!
