oatmeal energy bowl

COOKING TIME: 12 minutes

YIELDS: 4 servings

1 1/3 cups quick rolled oats
3 cups water
½ cup dairy-free milk
2 eggs – egg whites only
2 tsps coconut oil (or other healthy fat)
½ tsp 100% maple syrup
Pinch of cinnamon
Garnish: Whatever your heart desires i.e. 70%+ chocolate chips, fruit, nuts, seeds

Bring water to a boil in a pot. Stir in quick oats and return to boil. Reduce heat to low and simmer for 3-5 minutes. Remove from heat. Add egg whites slowly to your pot of oats while mixing quickly. This will help the eggs to not scramble. Once fully mixed, return to low heat for another minute while continuing to stir. Remove from heat, add milk, coconut oil, maple syrup and cinnamon. Mix well so all ingredients dissolve and oats appear creamy. Place oats in individual bowls and garnish with whatever your heart desires. Given I needed mine to be kid-friendly, I opted for the usual – dark chocolate chips.
